OLIVE PIE

Ingredients for 4 people
14oz flour
olive oil
salt
7 oz water(approximately)

Ingredients for stuffing
14oz black olives, pitted
3.5oz onion, finely chopped
fresh mint , finely chopped
sesame seeds
salt
pepper

PREPARATION
In a bowl, mix flour, the olive oil and the salt. pour the water in, slowly to make pliable dough.
Let it rest for about 30 min and at the same time, prepare the stuffing by pitting the olives. Finely chop the onions and mint, add the olives and check if more seasoning is needed(according to the quality of olives). Roll out the dough into 2 rectangular pieces and scatter on top the ingredients of the stuffing. Roll in the dough and shape it into cylindrical roll or a horse shoe drizzling wit a little water on top and sprinkling with sesame seeds. Bake at 355F for 30 minutes.

OLIVE OIL - GOLDEN LIQUID

Olive oil does not hold random so important place in the Mediterranean diet. The nutritional value was the one that demonstrated the importance in our daily lives and talking about its nutritional value we refer to the content of 'good' - unsaturated fat in fat-soluble vitamins (vitamin E) and antioxidants such as polyphenols.

Fatty ...
The beneficial value of olive oil in the Mediterranean diet pattern is mainly due to the content of monounsaturated fatty acids. Monounsaturated fats in the diet have been linked to maintaining the health of the cardiovascular system.
Studies have shown that when the saturated fat diet replaced by polyunsaturated and monounsaturated (so-called "good" fat), then it appears to improve the lipid profile.
That is why international organizations such as the World Health Organization and the American Heart Association, recommend replacing saturated fats (animal fats) than monounsaturated (olive oil) and polyunsaturated fatty acids (soft margarines, nuts, fish).
But precisely because fat is high in calories is important to emphasize the amount of oil we consume!

Antioxidants ...
Reducing the incidence of cardiovascular disease and other chronic diseases have been associated with the consumption of foods rich in antioxidants. The reason: Antioxidants protect against damage molecules and cell membranes.
The polyphenols, antioxidants that we know them as a component of wine, red fruits and coffee, are a key component of olive oil. When using olive oil as our main source of dietary fat manage to cover a significant percentage of our daily requirement of antioxidants.
Furthermore, the phenolic compounds of olive oil appears to be correlated with the health of the heart, acting against oxidative stress, and protect the quality of the oil as affecting the aroma and taste of the oil and simultaneously act against the oxidation of the same oil.

Vitamin E
Olive oil is an excellent source of vitamin E, a fat soluble vitamin which shows strong antioxidant activity. Vitamin E oil is a further component which is connected to maintain the health of the heart in combination with polyphenols and monounsaturated fatty acids.
The antioxidant activity of vitamin E oil has been associated, however, and the prevention of premature aging, as seems adequate intake has been associated with protection against degenerative diseases such as Alzheimer's Alzheimer.

MEDITERRANEAN DIET

The Greek Mediterranean Diet is one of the healthiest diets. It is characterized by a nutritional model that has remained constant over time and space, consisting mainly of olive oil, cereals, fresh or dried fruit and vegetables, a moderate amount of fish, dairy and meat, as well as a variety of condiments and spices, all accompanied by wine or infusions. 

According to research carried out in the last 50 years in parts of the Mediterranean, including Crete and southern Italy, the Mediterranean diet model is responsible for the longevity of its inhabitants and the absence of heart diseases or diseases of the digestive system.

However, the Greek Mediterranean diet is not merely a diet, but rather a way of life: it constitutes a set of skills, knowledge and practices, promoting social interaction, since communal meals are the cornerstone of social customs and festive events.

Since November 2010, the Mediterranean Diet has been recognized by UNESCO as an Intangible Cultural Heritage of Greece along with Italy, Spain and Morocco, thus reinforcing it not only as a fundamental part of these countries’ history and background, but also as a great contribution to the world.
